@ballymaloecookeryschool: Rory O’Connell speaking at the Heckfield Share Table event in the Glasshouse. Carrageen Moss Pudding is a Ballymaloe classic, made with carrageen moss, a red seaweed traditionally used to set milk puddings. Carrageen contains a natural setting agent, similar to gelatine, but derived entirely from seaweed. At Ballymaloe House, it is the only dish that remains on the dessert trolley every night.
