We used to add veggies to everything to trick our kids into eating a lot of them. Dosa, chapati dough, etc. Instead of rice, you can add yellow mung daal for crispness

Pesarattu - Whole Moong Dosa (Healthy, Crispy & Protein-Rich)
Ingredients
• 2 cups whole green moong dal (soaked 2 hours in hot water or overnight for best results)
• 1/4 cup rice (helps make the dosa crispy)
• 1/2 cup spinach leaves
• Handful of coriander leaves
• 1 inch ginger
• 1 green chilli
• Salt to taste
Directions
1. Drain the soaked moong dal and rice.
2. Add dal, rice, spinach, coriander, ginger, green chilli, and salt to a blender.
3. Add a little water and grind into a smooth, pourable batter.
4. Heat a tawa (pan) well. Lightly drizzle some water to cool it slightly, then wipe gently.
5. Pour a ladle of batter and spread evenly in a circular motion like a dosa.
6. Drizzle a little oil around the edges.
7. Cook on low to medium flame until golden and crisp.
8. If using less oil, flip and cook the other side. If using enough oil, cooking one side is sufficient. Cooking one side keeps it crisp outside and soft inside.
