The book kinda describes it as your greatest flaw/weakness as a human becomes your greatest strength as a vampire. Edward was always worries about what people thought, so now he reads minds, Alice was always scared about what will happen next, so she sees the future. Jasper was extremely empathetic so now he can feel and control the emotions of people around him, and so on

they do give an explanation for the powers actually!!! carlisle thinks that your most prominent trait as a human gets amplified when you’re turned. So for example, Jasper was good at reading and understanding people so he’s an empath.

So some human just have supernatural abilities and if they become a supernatural being then their original abilities get amplified. Like Bella was already a “sheild” she already had that power but when she becomes a vampire her power gets much much stronger
