THICK chunky Dubai chocolate cookies!  These double chocolate chip cookies have a creamy crispy pistachio kunafa filling in the middle. Tastes just like the Dubai chocolate bar but cookie form💚 210g unsalted butter cubed 170g granulated sugar 70g brown sugar 2 large eggs 350g all purpose flour 120g cake flour 43g cocoa powder 20g milk powder 180g all purpose flour 1 tsp cornstarch 1 tsp baking soda 1/4 tsp salt 100g semi sweet chips Make the filling first! In a pan, add in the butter and melt it, then add in the kunafa dough. Continue cooking on medium heat and mix every few seconds. Mix until it turns golden brown and crispy.  Pour the dried dough into a bowl and let it cool for 10 minutes. Add in the pistachio paste. You can add more if you want a more creamy mixture. Pour about a tbsp of dough into dollops and roll into balls. I do about 7. Make the cookies! In a stand mixer bowl, add in the cubed cold butter and sugars. Mix on medium speed until fluffy. Make sure to scrape the sides down. Add in the eggs and vanilla bean paste. Mix again  Sift in the flour, baking soda, cornstarch, cocoa powder. Salt  and milk powder. Mix on low speed and add in the semi sweet chocolate chips. Weigh each dough to 5 oz and then add in the pistachio kunafa filling in the middle. Shape the dough into a tall cylinder shape.  Place these doughs onto a lined parchment sheet and chill in the fridge overnight! Heat the oven to 410f .
