Adding meat to the classic French onion soup is such a game changer! Tender short ribs, caramelized onions, in a silky broth topped with a perfectly toasted baguette and melted Gruyère cheese. If you want a spoonful of comfort, this is it! TIPS: 1. Cut the beef into smaller chunks to reduce the cook time. Then trim off any excess fat from the beef, and season with a blend of salt, pepper, and garlic powder. Allow the beef to come to room temp before cooking. 2. Slice the onions as thin as possible with a knife or mandolin. 3. Sear the meat over medium-high heat for about 3-4 mins on both sides, then remove them from pot with any remaining oil. 4. Reduce the heat to medium-low, add in the butter and allow the onions to cook down uncovered with brown sugar for 45 mins to 1 hr until caramelized. Be sure to check and stir periodically to keep them from sticking and burning. (The onions should be brown and jammy without any liquid in the pot) 5. Once carmelized, sauté the onions with garlic and flour for 1-2 mins. Then add in the wine and Worcestershire sauce. Allow the alcohol in the wine to cook off for an additional 2-3 mins before pouring in beef stock. Season with black pepper, garlic powder, fresh thyme and a bay leaf. (Add salt to taste if you’re not using the better than boullion beef base.) 6. Add the beef back to the pot and cook covered on medium heat for 2 hrs or until the meat is fork tender. 7. Remove the stems and bay leaf, shred the beef and add it back to the pot. 8. In individual oven safe bowls, top each soup with a toasted baguette and Gruyère cheese. Allow the cheese to melt under the broiler for a few mins until golden. INGREDIENTS: For Beef: 1 1/2 lbs boneless beef short ribs or chuck roast Salt (to taste) Black pepper (to taste) garlic powder (to taste) To caramelize onions 4-5 Yellow onions 3 tbsps Unsalted Butter 1 tbsp brown sugar 3 garlic cloves (minced) 3 tbsps AP flour 4-5 cups Beef stock 1/2 cup Dry white wine 1 tsp Worcestershire sauce Fresh thyme 2 Bay leaves French baguette (sliced in 1in rounds) Gruyère cheese (shredded) #frenchonionsoup #souprecipe #fallrecipes #theremixkitchen
