This one might be user error only reason I say that is because the pan they used was sloped not flat

So I believe what is happening in the first part of the video is that they put the bowl in the middle while the pan is hot so that it heats up the air in the small bowl pushing out the extra hot air, then when they are ready to drain the oil the turn off the heat and as the air in the small bowl cools it sucks in the oil. I feel like it would require a pan that oil naturally wants to pool in the center of to work best.

When there’s food in the pan the oil level is higher because of the added volume, the pan is rounded so the deepest part of the oil is in the middle. You put a bowl there, and it traps the oil in the center at the highest level while the oil level around it lowers as the volume (food) is removed. It doesn’t keep all of the oil in the pan, but it does keep some.

The pan has to be rounded so the oil runs to the middle. The bowl stops the food falling into the oil pool under it.
