Can you still cook dinner for your family of 4 for $20?  If you shop at ALDI  you can.  And it’s delicious!  This is my “dumpling lasagna” hack and it’s the easiest $20 dinner for 4. It tastes like dumplings, but you build it like a lasagna, then serve it with a quick pickled cucumber salad for crunch. Save it for the tight budget weeks that you still want to eat delicious food! Dumpling lasagna + pickled cucumber salad (serves 4) What you NEED Fresh lasagna sheets $3.69 500g Pork mince $4.49 250g Coleslaw mix $1.99 1 bunch Green onion $2.49 1/2 cup Soy sauce $1.79 4 tbsp Oyster sauce $2.19 1 Cucumber $1.29 2 tbsp Crushed ginger  (already in the fridge) 1 tbsp minced garlic (already in the fridge) What you do 	1.	In a big bowl, mix pork mince, coleslaw mix and sliced green onion. 	2.	Add garlic, ginger, a 1/4 cup soy sauce and oyster sauce. Plus a dash of white pepper if you have it. Mix really well. 	3.	Drizzle a little oil and a cup of water in a large saucepan,  then lay down fresh lasagna sheets. 	4.	Add a layer of the mince mixture, then repeat sheets and filling until it’s all used up. 	5.	Mix another cup of water with an extra splash of soy, then pour it over the top so the sheets cook properly. 	 	6.	cover with a layer of baking paper, then pop the lid on. 	7. Cook on medium for about 35 to 40 minutes, until cooked through. Add another cup of water over the top halfway through. Pickled cucumber salad 	1.	Thinly slice cucumber (I used a mandolin), then toss with sliced green onion. 	2.
