Water droplet test! Put the oil on and then let it sit for a few minutes while it cools down. Throw some butter in the pan and then egg in after! Basically there just needs to be a good layer of oil or butter under to help it not stick!

Of course it’s not working if ur using that bulky spatula yiu need a thin metal spatula yiu can scrape the pan as much as you like with it since u don’t gotta worry about scraping coatings

Use butter, don’t even do the droplet test. So get your butter, add to a cold pan, wait for it to bubble at a good temp so it doesn’t burn and just add your eggs after.

Cover your pan with a lid or a flat plate and let the steam cook the top of the egg. No need to flip and you'll struggle less to get it out.

For eggs in a stainless steel pan the best thing to do is preheat the pan on medium-low heat for 2 minutes, remove from the heat for 30 seconds, then add butter, add the eggs, then turn the heat back on medium-low or low. I do this every morning and they never stick! :)
