These homemade vanilla cake donuts are soft, dense, and topped with a glossy pink vanilla frosting. They’re everything you love about a classic birthday cake donut — no frying required. INGREDIENTS: Donuts: 3¾ cups all-purpose flour, 2 tsp baking powder, ½ tsp baking soda, ¼ tsp ground nutmeg, 10 tbsp salted butter (room temp), 1 cup granulated sugar, ⅓ cup light brown sugar, 3 large eggs (room temp), 2 tsp vanilla extract, ¾ cup sour cream (room temp), ½ cup buttermilk (room temp) Icing: 4 cups powdered sugar, 6 to 7 tbsp whole milk, 2 tbsp light corn syrup, 1 tsp vanilla extract, pink gel food coloring, 1 cup rainbow sprinkles. DIRECTIONS: Preheat oven to 350°F. Grease large 6-cavity donut pan with nonstick spray. Whisk flour, baking powder, baking soda, and nutmeg; set aside. In bowl of mixer with paddle attachment, beat butter, granulated sugar, and brown sugar until light/fluffy. Add eggs one at a time, mixing well after each. Mix in vanilla. With mixer on low, add half the flour mixture, followed by sour cream, then remaining flour. Slowly add buttermilk and mix until just combined. Transfer batter to piping bag or zip-top bag with corner snipped off. Pipe into prepared donut cavities, filling each about ½ full. Smooth tops with spoon. Bake 14 - 17 min, until lightly golden around edges. Cool in pan for 8 min, then transfer to wire rack to cool completely. Repeat two more times with remaining batter. For icing, mix powdered sugar, 6 tbsp whole milk, corn syrup, and vanilla until smooth and glossy. Add more milk, 1 tsp at a time, if needed. Icing should easily coat donuts but be thick enough to stay in place. Tint with pink gel food coloring, about 3-4 drops. Dip cooled donuts into icing, allowing any excess to settle back into the bowl. Place on cooling rack set over baking sheet. Immediately top with sprinkles.
