Skip the baking soda soak. Instead drop the whole limes into a pot of boiling water for 10~20 seconds, then remove straight into a sink of cold water. This quickly removes the thin layer of wax found on the outer surface of nearly all produce. The difference in the texture and smell of the rind/zest afterwards is immense. When you’ve finished with the boiling water, let it cool to room temp and you will find a thin film of cooled, dirty wax floating on top. I do this with all citrus when I intend to use the zest in a recipe of any kind.
