White chocolate and raspberry cookies. Make these for your valentine 🎁🍪 📝 Ingredients (Yields about 12 large cookies) • 160 g softened butter (very soft, but not melted) • 50 g white sugar • 50 g light brown sugar • 1 large egg (room temperature) • 1 tsp vanilla extract • 250 g plain (all-purpose) flour • 5 g baking powder • A pinch of salt • 200 g white chocolate chips • 80 g frozen raspberries (using frozen helps them hold their shape) 👩🍳 Method: 1. In a mixing bowl, beat the soft butter together with both sugars until light and creamy. 2. Mix in the egg until fully incorporated. 3. Add the vanilla extract and stir to combine. 4. Tip in the flour, baking powder and salt. Stir just until a dough forms, avoid overmixing. 5. Gently fold through the white chocolate pieces and frozen raspberries using a spatula. 6. Cover and chill the dough for at least 20 minutes to firm up. 7. Scoop the dough into evenly sized balls and place them on a sheet of parchment paper. • For a richer finish, press a few extra white chocolate pieces on top. • Leave the dough balls rounded, do not press them down. 8. Transfer the shaped dough balls to the refrigerator for another hour. 9. Heat your oven to 180°C (350°F). 10. Arrange the dough balls on a lined baking tray, spacing them apart to allow for spreading. 11. Bake for 10–15 minutes, until the edges turn lightly golden while the centers stay soft. 12. As soon as they come out of the oven, you can neaten their shape by gently circling them with a cookie cutter or the rim of a glass. 13. If desired, top with a few extra chocolate chunks or raspberries while still warm. 14.
