@_whativyeats_: Chicken with Coconut and Peanut Noodles! Suitable from 6 months (not using whole nuts) You will need (For 2 adults and 2 kids): - 2 chicken breasts, diced - 1 teaspoon ginger - 2 teaspoons of flour - 1/2 teaspoon mild chilli powder - 2 teaspoons of sugar - 1.5 teaspoon of red Thai curry paste - 1 tin of coconut milk - 1 bunch of spring onions, sliced - 3 tbsp of peanut butter (can use 75g chopped peanuts if children are over 4/5 year old) - 200g fresh egg noodles Method: - Firstly mix together your flour, ginger, chilli and sugar then coat your chicken strips in this. - Add a little oil to a pan and cook through your chicken strips. Once cooked add your spring onions, cook for a further minute. Then place in a bowl to one side. - Next add your curry paste, peanut butter and coconut milk to your pan to make your sauce. Once combined together add your noodles and cook through until hot. - Serve your noodles into bowls, add the chicken on top and ready to serve! - You can also add chopped peanuts for children over 4/5 year old on top.
