Chicken Caesar salad bowls 😛 Ingredients (serves 2): For the chicken: 2 medium chicken 1 tsp olive oil or olive oil spray 1 tsp garlic granules 1 tsp dried mixed herbs or Italian seasoning Salt and black pepper For the potato wedges: 300g baby potatoes, cut into wedges 1 tsp olive oil 1 tsp garlic granules 1 tsp dried mixed herbs Salt and black pepper For the caesar Salad: 2 romaine lettuce hearts, chopped 60g bacon lardons 20g croutons (10g per serving) For the dressing: 100g 0% Greek yogurt 50g light mayonnaise 15g grated Parmesan 1 tsp Dijon mustard 1 small garlic clove 1 tbsp lemon juice 2–3 tbsp water Black pepper to taste Firstly, toss the potato wedges with the olive oil, garlic granules, mixed herbs, salt and pepper. Air fry at 200°C for 25 minutes, shaking halfway through, until golden and crispy. Coat the chicken breasts with the olive oil, garlic granules, mixed herbs, salt and pepper. Air fry at 200 degrees C for 20 mins, turning halfway through. Leave for 5 mins then slice.  Cook the bacon lardons in a pan until crispy. Then to make the dressing, whisk together the Greek yogurt, light mayonnaise, Parmesan, Dijon mustard, garlic, lemon juice, water and black pepper. Coat the romaine lettuce with some of the dressing and split between two bowls, mixing in some extra Parmesan. Plate up the crispy potato wedges, sliced chicken, crispy bacon lardons and a couple of croutons per serving.
