Ingredients (per cup): • 1 Medjool date • 2 teaspoons peanut butter (or your favorite nut butter) • 70% dark chocolate, melted (amount depends on the size of the date) Instructions: Slice the date lengthwise and remove the pit. Fill the center with 2 teaspoons of peanut butter. Top or coat with melted 70% dark chocolate. Refrigerate for 15–20 minutes until the chocolate hardens. That’s it. Dates contain fiber that can support gut health, digestive health, bowel regularity, fullness, and satiety. They’re naturally sweet and contain beneficial plant compounds called polyphenols. The peanut butter adds healthy fats and makes the dessert more satisfying. And 70% dark chocolate brings more than just flavor. Dark chocolate is rich in antioxidants and polyphenols that have been studied for their potential benefits on heart health, vascular health, and gut microbiome health.
