One of the problems is that people have this notion the gluten is inherently bad for everyone so they don’t understand how serious celiac is. Another issue is the idea that food in the US is evil and bad no matter what it is😭😭

I think the confusion comes from conflation of celiac disease with gluten intolerance. Some people diagnosed with non-celiac gluten sensitivity find relief on a low FODMAP diet, because they might be reacting to the carbohydrate instead of gluten…so for those people sourdough and other European breads where fermentation breaks down some of the carbs might be easier to digest. But as a celiac I find this so annoying.

This is the first video I remember of you talking about celiac, so I don’t know your relationship to it, but my doctor told me we are 3-5 years out from a cure! Or at least the ability to act like the intolerant people and not be in extreme pain when we accidentally ingest gluten! There are a few great clinical trials at the moment and they are being really successful.

people who think "lower gluten wheat" is at all relevant for people with celiac have no fucking idea how celiac disease works. I dont have it but my friend does and im apparently one of the few people he knows who actually gets that it is that serious (probably because my mom was super allergic to shellfish, and i have a biology degree so i know what "it doesnt denature in the dishwasher" means). i invited him to a party where I was going to be making food. I bought new sponges and wooden spoons, washed the pot and knife by hand with the new sponge, and covered my plastic (NOT WOOD) cutting board with foil. then I had a separate table for all the gf food with a sign telling everyone else not to cross contaminate anything. I successfully didnt poison him but yes all of that was necessary to accomplish that

As someone who has more than their fair share of relatives with celiac... Yeah... *any* amount of gluten is bad for them... Where I will give a little grace to those who don't know: There are oats (not wheat) that can be purchased that have no gluten nor cross contamination with gluten cereals... It still isn't wheat... But maybe that is what is confusing some people...
