I definitely don’t eat enough pork steaks and I need to change that. These were so damn good! You can buy them pre-cut like I did from my local @heb or cut your own from a pork shoulder for much larger steaks, which I definitely plan on doing in another video. A good mop sauce is key because pork steaks can dry out while cooking. I like taking mine higher than a normal steak, around 175-185°F internal, for that perfect tenderness. These were straight money. The flavor of the mop sauce dripping into the fire and flaring back up to the meat gives it an amazing flavor. 🔥 Mop Sauce: • 1 cup white vinegar  • 1 cup Apple cider vinegar  • 1/2 cup water  • 2 tbsp brown sugar  • 1 tbsp garlic powder  • 2 tbsp @Melinda's Hot Sauce Sriracha (Now available at Costco in a 31.5oz bottle) • 2 tsp kosher salt • 1/2 a bottle of @Shinerbeer  Instructions: 1. Season pork steaks with SPG on a wire rack, then let them sit in the fridge for 1 hour or overnight for a dry brine. 2. Add all the mop sauce ingredients to a pot and bring to a boil. Lower to a simmer and let it cook for 15 minutes. 3. Pork steaks are best cooked over direct heat, but not so close that you burn the outside faster than the inside cooks. I chose to smoke mine at 180°F for 30 minutes first using @Bearmountain BBQ pellets for maximum smoke flavor, then moved them over the firebox to finish cooking. Flip and baste every 5 minutes or so until they hit an internal temp of 175-185°F. 4.
