I have a hard time maintaining my heat on my Weber kettle I use B&B charcoal. I let them get real hot in the chimney once the flame goes out and their red I put them on the grill but the temps won’t go above 375 sometimes

This is what you need for hot and fast searing.. always wise to leave a cold area to finish cooking thicker cuts and prevent grease flare ups.

Has to be white when you use lighter fluid. Can’t cook with the fumes still evaporating. If you use a tumbleweed you can start at any point.

I only do that when I’m cooking on direct heat for fast food. If I’m smoking I never leave it fully white unless I have wood

But how do you light ALL of them evenly??? I hate starting it on one side cuz I feel like it takes a while to get to the other and by the time it’s does its half done. Start on both sides towards the middle?
