I hope you realize the reason why so many things are in such large packages is because we don't go to the store every single day. Going grocery shopping often would be considered every 2 weeks. If we can get away with it, we buy a month's worth of food at a time and only shop once a month.

Salami is traditionally cured and dried while hanging for weeks or months without refrigeration. The whole point of the curing process is to preserve it. Why would the fact that it’s not refrigerated be surprising?
