There is more too speed. Not every app requires the fastest protocol. You have to consider the SDLC. Maintenance and ease of use / changes as well as team adoptability

• REST: boring and fine cached, slow uncached. • WebSocket: real-time, but the reconnection logic becomes its own job.

It really depend on the task each request is doing and also consider you have a CDN setup otherwise for user far away from your server you will have a baseline minimum latency that you can’t avoid
