In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. 2. In a separate bowl, combine the plant milk and apple cider vinegar. Let it sit for 5 minutes. 3. Add the milk mixture, melted coconut oil, and vanilla extract to the dry ingredients. Whisk just until combined. The batter should be thick and slightly lumpy. Do not overmix. 4.
