@daywithmei: Growing moldy tofu at home 🧫🫘 AKA furu 腐乳 I’ve got 6 pounds of this stuff fermenting as we speak to find the best practices for fermenting moldy tofu at home. I’ve been able to source the starter spores from ebay and Weee! @chillcrisp has two videos and an article on moldy tofu already uploaded (very thorough, go check it out!) I’m building on that inspiration with a bonus fried preparation and some citations related to our scientific understanding of this ancient food
How does the mold make it taste different to regular tofu?

I need everyone to know that brie and camembert go through what's called the "fuzzy coat" stage before developing their true rind

traditional salami is also inoculated with mold on the exterior so that harmful pathogens don’t get in

I am interested in trying this now, this is something I've never seen before. I love how you show people things that are common to some but unknown to other—like a culinary PBS

I've wanted to try it when I first saw it. I've made brie a few times and it's interesting how similar the mold formation is

I think this is officially my sign to make some home made furry tofu. I’ve got no frame of reference for what it’s supposed to taste like but I love fermented foods and this seems like a delicious way to preserve a block of tofu so I’m gonna give it a shot
