hallelujah indeed (for the sticky toffee coffee pancakes): - 3-4 medjool dates, pitted - 2tsp instant coffee, dissolved in 50ml hot water (or a strong double espresso) - 150g cottage cheese - 2 eggs  - 100g (3/4 cup) plain flour  - 2tsp baking powder - butter for frying (for the caramelised banana): - 1 banana, sliced lengthways - butter for frying (to serve): - full fat greek yogurt  - honey method: 1. begin by placing the dates in a medium sized bowl and pour over the hot coffee. 2. using a spoon, begin the mash the dates until you form a thick paste. 3. add in the cottage cheese, eggs, flour and baking powder and mix until thoroughly combined and no lumps of flour remain. 4. melt 1tbsp of butter in a medium sized frying pan on a medium to low heat. 5. spoon about 2tbsp of the batter per pancake onto the pan in rounds. 6. cook for at least 5 minutes on one side (make sure the heat is relatively low as we don’t want to burn them!). 7. once golden brown, carefully flip the pancakes and cook on the other side for another few minutes until both sides are golden. 8. remove from the pan and repeat these steps with the rest of the batter. 9. leave the pancakes to one side (perhaps in a warm oven to keep them warm!) and melt 1tbsp of butter in the same pan. 10. turn the heat up slightly and place the banana slices face down onto the pan. 11. cook for a few minutes until beautifully golden and caramelised. carefully flip the bananas over and cook for another few minutes until both sides are caramelised. 12. serve the pancakes in a stack and top with a generous dollop of greek yogurt. 13. carefully place the bananas on top and finally, drizzle with some honey… enjoy xxx🍯🍌 #breakfast #pancakes #dates #yogurt #cottagecheese
