Let cool completely. 🍋 LEMON CURD  Ingredients: * 3 egg yolks * 70 g sugar * 60 ml lemon juice * Zest of 1–2 lemons * 60 g unsalted butter * 1 tsp vanilla * Pinch of salt Instructions: 1. Whisk egg yolks and sugar together. 2. Add lemon juice and zest. 3. Cook over low heat or double boiler, stirring constantly. 4. Cook until it thickens enough to coat a spatula but remains smooth. 5. Remove from heat. 6. Add butter in cubes and emulsify. 7. Stir in vanilla and salt. 8. Cool completely. 🍋 LEMON CREAM CHEESE FROSTING Ingredients: * 226 g cream cheese (1 block) * 60 g unsalted butter * 120–150 g powdered sugar * Zest of 1 lemon * 1–2 tbsp lemon juice * ½ tsp vanilla (optional) * Pinch of salt Instructions: 1. Beat butter until smooth. 2. Add cream cheese and mix just until combined. 3. Add powdered sugar gradually. 4. Mix in lemon zest and vanilla. 5. Add lemon juice little by little at the end. 6. Mix just until creamy (do not overbeat). 🧁 ASSEMBLY 1. Fill cooled cupcakes with lemon curd (center). 2. Pipe or spread lemon cream cheese frosting on top. 3.
