Steak with chimichurri 🥩 Chimichurri: • 1 bunch cilantro • 1 bunch parsley • 2–3 garlic cloves • 1 fresh chili • 80 ml olive oil • 2 tbsp red wine vinegar • juice of 1 lemon wedge • oregano • salt & black pepper Finely chop all ingredients and mix with olive oil, vinegar and lemon juice. Mashed potatoes: • potatoes 700 g • milk 140 ml • butter 40 g Boil the potatoes in very salty water. Pass through a sieve, add hot milk and butter. Take the steak out of the fridge in advance. Sear for 1–2 minutes on each side depending on thickness. Add butter, garlic, thyme and rosemary, then spoon the aromatic butter over the steak. Let it rest before slicing. Steak con chimichurri 🥩 Chimichurri: • 1 manojo de cilantro • 1 manojo de perejil • 2–3 dientes de ajo • 1 chile fresco • 80 ml de aceite de oliva • 2 cda de vinagre de vino tinto • zumo de un gajo de limón • orégano • sal y pimienta negra Picar finamente todos los ingredientes y mezclar con aceite de oliva, vinagre y zumo de limón. Puré de patatas: • patatas 700 g • leche 140 ml • mantequilla 40 g Hervir las patatas en agua bien salada. Pasarlas por un colador y añadir leche caliente y mantequilla. Sacar el steak del frigorífico con antelación. Cocinar 1–2 minutos por cada lado dependiendo del grosor. Añadir mantequilla, ajo, tomillo y romero, y bañar la carne con la mantequilla aromática.
