I love making Chilli Crisp when I want a spicy, crunchy topping ready to go in the fridge for noodles, eggs, rice and more. ✨What You NEED✨ 2 tbsp fresh ginger 1 bulb garlic 1 litre vegetable oil 2 cups dried red chilli flakes 2 tbsp chilli powder 200g fried shallots 110g fried garlic 1 tbsp Chinese 5 spice 1 tbsp sugar 1 tbsp salt 1 tbsp pepper 1 tbsp chicken stock powder ✨What You DO✨ Finely slice your garlic and ginger, then pop them into a saucepan with the cold oil. Place it on medium heat and let it gently sizzle away until your garlic turns golden and smells amazing. While that’s bubbling, add all your remaining ingredients to a big heatproof bowl — I like to use a large stainless steel mixing bowl or pot (not glass or plastic!). Once your garlic is lightly golden, turn off the heat and let it sit for 2 minutes to cool slightly. Carefully pour the hot oil (with all that garlic and ginger) over your dry ingredients. It’ll sizzle, pop, and smell incredible! Give it a good stir, let it cool completely, then spoon into clean jars and seal with a lid.
