@emthenutritionist: ANCHOVY, EGG & COTTAGE CHEESE TOAST I feel like social media discovered butter and anchovies on toast this year, and this is my fresh, higher-protein version that you can make for breakfast, as a snack or even a speedy lunch. It is VERY hot in the UK right now, so this is exactly the kind of thing I want to eat. Salty, creamy, lemony and ready in under 10 minutes. Serves 1
Approx. 350 kcal, 26g protein Ingredients
1 slice of toast
2 tbsp cottage cheese
2 eggs
3 anchovies
A few chives, finely chopped
Lemon zest Method
Boil the eggs for 7 minutes, then run under cold water and peel. Toast your bread, then spread over the cottage cheese. Halve the eggs and pile them on top, then add the anchovies, chives and a little lemon zest. Season to taste and eat straight away. #toast #healthyrecipes #quickrecipes
