My Gnocchi… Anyhow, this is the way that I make gnocchi. First, rice the boiled potatoes and then lay out the riced potatoes on a big tray to dry out some more…( about 6 cups of riced potatoes) then I add 1/2 cup or more of Pecorino Romano cheese, kosher salt , chopped parsley, and a sprinkle of fresh nutmeg….After awhile I put it into a large bowl and add 2 eggs and flour ( about 1 cup of flour) mix it all up and… Then I roll them into ropes and cut them ( see pics) I usually roll them off a fork… However, I recently bought a gnocchi board…I like potato gnocchi better than ricotta gnocchi; it’s a matter of taste….and that’s what’s for dinner!
