As a Christian, I actually respect Korra. Her arguements are typically quite thorough. That said, with this example, she’s reaching a lot calling this a dilemma. For example, when a teacher says “Everyone is here.”, is the context the classroom, or the whole world?

The smallest seed in the world is the orchid seed. However, Christ was teaching about the Kingdom of God, and the mustard seed was a better representation of the theology He was conveying. Unlike orchid seeds, mustard seeds grow into large plants, making them a fitting analogy for the Kingdom’s growth. Moreover, the mustard seed was familiar to Jesus’ audience, so His disciples could readily understand the illustration.

in Greek the word used for seeds is "σπερμάτων" which are seeds you plant to eat like wheat for example so the mustand seed is the smallest eatable seed of the first century Judea

In this case, it really was the smallest seed at the time, and as you yourself say it was part of a parable. If he had compared it to a seed that people back then didn't know, then the parable and therefore his teaching would have made no sense.
