@samuplatesup: you NEED to try these smashed honey parmesan carrots 🥕🍯 crispy around the edges, sweet, salty and served with the creamiest feta yogurt dip 🤌 INGREDIENTS: For the carrots: • 500 g small carrots • 1 tbsp olive oil • 1–2 tbsp honey • 40 g finely grated parmesan • ½ tsp paprika • ½ tsp garlic powder • salt + black pepper • chili flakes optional For the feta yogurt dip: • 150 g Greek yogurt • 60 g feta • 1 tsp honey • 1 tsp lemon juice • black pepper • chili flakes • fresh parsley METHOD: 1. Cook the carrots in salted water for around 12–15 minutes until soft enough to smash. 2. Drain well and place them on a lined baking tray. 3. Gently smash each carrot with the bottom of a glass. 4. Top with olive oil, honey, parmesan and the spices. 5. Bake at 220°C / 425°F for around 25–30 minutes until golden and crispy. 6. Mix all dip ingredients until creamy. 7.
