@hygge.haven: if you want tender, crisp, and sweeter celery, then you should blanch them about 2-4 weeks before harvest! blanching will block the uv light from the stalks, which uv light makes the stalks more bitter, fibrous, and stringy. blanching will also strengthen the stalk giving support to grow thicker. celery is a heavy feeder and loves water so make sure you're fertilizing every 2 weeks with a high nitrogen fertilizer, and don't let the soil dry out. So I’ve cut the celery I purchased and put the base into water to have it grow again. I’ve only put two outside but will the grow in the summer? It really was an experiment and it grows for sure. I just don’t want to burn them in the summer sun.

If you plant them much tighter in a smaller space, you don’t even need to do that. I had a small area that was 4 x 4, and I put them very close together and the tightness of the planting actually helped make them grow into what we see as celery in a grocery store. Not everyone was perfect, but the majority of them did stalk up if you wanna call it that. I also did pink celery but that one didn’t work as well, but there’s always next year.🥰
