@hygge.haven: if you want tender, crisp, and sweeter celery, then you should blanch them about 2-4 weeks before harvest! blanching will block the uv light from the stalks, which uv light makes the stalks more bitter, fibrous, and stringy. blanching will also strengthen the stalk giving support to grow thicker. celery is a heavy feeder and loves water so make sure you're fertilizing every 2 weeks with a high nitrogen fertilizer, and don't let the soil dry out.
