I just don't understand the link between someone being unable to control their chakra, so someone else has to help them control their chakra, to the entirety of the Naruto verse can only ever being in attack or defense.

This is so stupid. For 1, prove how much she is amplifying her durability. While yes, she probably can increase her defense, nothing suggests all of her focus is in that moment is defense since she has been attacking them and using techniques that use lots of chakra. 2. The key thing you even mentioned is learning to do this through training. Don’t think we have seen any otsutsuki doing any amount of training, therefore you can’t apply that to her the same way.
