Make the Dough Mix warm water, yeast, and sugar. Let bloom 5–10 mins. Add oil, salt, and flour; mix into dough. Rest 30 mins, then do 3 stretch-and-folds (25–30 mins apart). Cover and let rise 1 hour until puffy. 2. Cook Chicken Marinate chicken with spices, yogurt, ginger–garlic paste, salt, and oil. Rest 30 mins, then cook until done. 3. Make Peri-Peri Sauce Roast bell pepper, tomato, garlic, and chilies with oil, salt, and pepper until charred. Blend with coriander, lemon juice, smoked paprika, and olive oil. Add water/oil to adjust consistency. 4. Shape the Pizza Dust surface with flour + semolina. Stretch dough by hand (thin center, thicker edges). Don’t use a rolling pin or deflate. 5. Assemble Brush crust with sauce, spread a thin layer in the center, then add mozzarella → chicken → veggies → more mozzarella. 6. Bake Preheat oven to 250–280°C with tray or pizza steel/stone inside.
