It’s shrimp with xa xiu seasoning. If you’ve had pork in that style, it’s the same idea. The seasoning mix is that color. It is possibly red 40 but in Viet food the red often comes from annatto seeds. When we make food at home that should be red we use annatto and it is very vibrant.
