Teochew migrants fleeing famine in southern China brought this dish to Bangkok centuries ago. It has been feeding this city ever since. Uncle Wang has been feeding this corner of it for six decades, on a prosthetic, every single day, because he refuses to be a burden to anyone. Some places just have soul.
