PITA | Greek yoghurt has a quiet way of transforming bread. In pita dough, it brings softness, moisture, and a gentle tang that makes every bite feel balanced and satisfying. Using Australian-made @chrisdips_ Greek Set yoghurt, crafted the traditional way, carries that same care and intention into the kitchen. It’s a reminder that great food doesn’t need to be complicated — just honest ingredients handled well. The result is tender, golden pockets of pita, made to be enjoyed as they always have been: simple, generous, and shared. • ¾ cup warm water • 1 packet (7g) dry yeast • 1 tbsp honey • 550g plain flour (plus extra for dusting) • 1 tsp salt (assumed, adjust to taste) • 3 tbsp extra virgin olive oil • 100g (about ¾ cup) Greek yoghurt  In a small bowl, combine the warm water, yeast and honey. Stir gently and set aside for 5–10 minutes, until frothy. 1. In a large bowl, combine the flour and salt. 2. Once the yeast mixture is frothy, add the Greek yoghurt and olive oil to it. Mix well then pour this mixture into the flour and mix until a dough forms. 3. Turn the dough onto a lightly floured surface and knead for 7–10 minutes, until smooth and elastic. 4. Place the dough into a lightly oiled bowl, cover, and leave to rise for about 2 hours, or until doubled in size. 5. Turn the dough out onto a floured surface and divide into 8 equal balls approximately 100g each. Cover and rest for 20 minutes.  6. Roll each ball out approximately 1cm thick. 7. Place the pitas onto a lined or lightly floured tray. 8. Bake for approximately 8 minutes, rotating halfway through, until puffed and lightly golden. 9.
