Brownie Mix (makes one 8x8 or 9x9 pan) Dry Mix Ingredients: * 1 cup sugar * ½ cup all-purpose flour * ⅓ cup cocoa powder * ¼ tsp salt * ¼ tsp baking powder To Bake: * 2 eggs * ½ cup vegetable oil * 1 teaspoon vanilla extract Instructions 1. Make the Mix Combine all dry ingredients in a bowl and whisk well. Store in a labeled Ziploc bag or mason jar. 2. Bake Preheat oven to 350°F. Grease an 8x8 or 9x9 pan. Add eggs, oil, and vanilla to the dry mix. Stir until just combined (do not overmix). Pour into prepared pan. Bake for 20–25 minutes (check at 12–15 minutes). Brownies are done when a toothpick comes out with a few moist crumbs. Tips * For extra fudgy brownies, underbake slightly. * Add chocolate chips, nuts, or a swirl of peanut butter for fun variations. * Double or triple the dry mix for multiple batches. This is the perfect frugal pantry staple — fresh brownies anytime you want them!
I would like to substitute the sugar. I work with diabetic residents. I'd love to try this but I can't do that amount of sugar for them. Anyone have any ideas?

Okay this had been around a lot...and believe me these are the best brownies. I just don't believe it's 30 cents a batch. With the rapid rise of food prices I doubt it.

Maybe hard to tell from the picture, but mine sank, of course I had a tiny piece while it was still scalding hot and they were pretty yummy. So hopefully, once they cool, they will be the best.
