Ingredients ½ cup oil 1 large onion, thinly sliced 1 tsp ginger garlic paste 3 green cardamoms 1 black cardamom 4–5 black peppercorns 2–3 cloves 2 cinnamon sticks 1 tsp cumin seeds 1 tsp fennel seeds 1 tsp crushed coriander seeds 1 tsp red chili powder 1 tsp coriander powder 1 tsp garam masala powder 1 tsp red chili flakes 1 tsp chicken powder or 1 chicken cube Salt to taste 2 tomatoes, pureed 250 g boiled chickpeas ½ cup chickpea stock Green chilies Fresh coriander leaves 2 tbsp mixed pickle (achar) 2 cups soaked rice 1½ cups water Food color (optional) Method Heat oil and fry sliced onion until golden. Remove half for garnish. Add ginger garlic paste and sauté. Add whole spices and cook for a few seconds. Add all powdered spices, tomato puree, and cook until oil separates. Add boiled chickpeas with chickpea stock, green chilies, coriander leaves, and pickle. Mix well. Add soaked rice and water. When water reduces by half, adjust salt and add food color. Cover and cook on high heat until steam appears, then simmer on low heat for 10 minutes.
