This super delicious and packed with flavours Saudi style Chicken Kabsa is so easy and extremely tasty, do try it ! Ingredients: 3/4 cup Oil 700 gms Chicken  1 large onion chopped  2 dried lemons 2 cinnamon sticks 4 cardamom 8-10 peppercorns  5 cloves 3 bay leaves 1 large tomatoes blended 2 tbsp tomato paste 1 tbsp garlic crushed  1 tbsp salt 1 tsp black pepper  1 tsp paprika  1 tbsp coriander powder  1 tbsp Cumin powder  1/4 tsp Cinnamon powder 1/4 tsp Turmeric  4-5 green chillies 2.5 cups Basmati Rice(wash and soaked 20 minutes) 6 cups water 8-10 sliced almonds for garnish  For Tomato Chutney: Blend together 2 tomatoes, 2 garlic, 2 green chilies,1 tsp cumin,4 tbsp coriander, 1 tsp lemon juice, 1/2 tsp salt,4 tbsp water. Method: In a pan add oil, dry lemon, cinnamon,bay leaf,peppercorn,cardamom, saute 3-4 min, add onion, cook 5 min, then add tomatoe and tomato paste,all the mentioned spices, saute ,Add the chicken pieces cook on medium high flame from both sides for 7-8 minutes until a nice color is formed, add water, green chilies, cover and cook 20 min. Take out the chicken pieces and half cup of broth. Mix broth with 3 tbsp oil and 1 tbsp tomato paste. Place the chicken on a baking tray,brush the broth paste,and broil at 180C for 12-15 minutes until nicely browned. Add some almonds at the end ,on the tray to roast too. In the broth add rice, let it boil for 10-13 minutes,till the water has evaporated.Then lower the flame, cover and cook for 10-12 min at lowest flame.
