@kyfitjourney: The ultimate comfort dinner😮💨steak, fluffy mashed potatoes, and a rich creamy mushroom sauce 10/10 always 🤌🏽✨ Ingredients (Serves 2) For the Mash 500g potatoes, peeled and chopped 1 chicken stock cube 1 tsp salt (for the cooking water) 30g butter 80ml warm whole milk For the Creamy Mushroom Sauce 250g chestnut mushrooms, finely chopped 1 tbsp butter 1 tbsp olive oil 2 garlic cloves, minced 2–3 thyme sprigs Salt, to taste Black pepper, to taste 200ml beef stock 2 tbsp cream cheese or 100ml double cream 1 tsp Dijon mustard For the Steak 2 sirloin steaks Salt, to season Black pepper, to season 1 tbsp olive oil 20g butter 2 garlic cloves, lightly crushed 2 thyme sprigs Method 1. Make the Mash 1. Bring a large pan of salted water to the boil, crumble in the chicken stock cube and stir to dissolve. 2. Add the potatoes and boil for 18–20 minutes, or until fork tender. 3. Drain well and leave to steam dry for 1–2 minutes. 4. Mash with the butter and warm milk until smooth. Season to taste and keep warm. 2. Make the Mushroom Sauce 1. Heat the butter and olive oil in a frying pan over medium heat. 2. Add the finely chopped mushrooms and cook for 8–10 minutes, stirring occasionally, until golden and most of the moisture has evaporated. 3. Stir in the garlic, thyme sprigs, salt and pepper and cook for 1 minute until fragrant. 4. Pour in the beef stock and simmer for 5–7 minutes, allowing it to reduce by around half. 5. Stir in the cream cheese (or double cream) and Dijon mustard until smooth. 6. Remove the thyme sprigs and simmer for a further 2–3 minutes, or until the sauce reaches your desired consistency. If it’s too thick, add a splash more stock or cream. 3. Cook the Steak 1. Pat the steaks dry and season generously with salt and pepper. 2. Heat the oil in a frying pan over high heat until smoking hot. 3. Add the steaks and cook for 2½–3 minutes on the first side. 4. Flip and cook for a further 2–3 minutes for medium-rare. 5. Add the butter, garlic and thyme, then baste continuously for the final 1 minute. 6.
