Arancine 🍊  Recipe:  Ingredients: 	•	1 ½ pounds Italian rice (vialone or originario) 	•	½ cup red wine  	•	1 sage leaf 	•	2 eggs, beaten 	•	⅛ teaspoon grated nutmeg 	•	½ cup grated caciocavallo or parmesan cheese 	•	Salt and freshly ground pepper 	•	1 cup blanched tiny peas, fresh or frozen 	•	1 small onion, minced 	•	1 celery rib, chopped 	•	2 tablespoons olive oil 	•	½ pound ground veal or beef 	•	1 cup plain tomato sauce 	•	1 teaspoon tomato extract (or 1 tablespoon tomato paste) 	•	2 cups dried breadcrumbs 	•	Vegetable oil for frying Instructions: 	1.	Cook the rice in abundant boiling water, lightly salted, until tender (about 15 to 20 minutes). Drain well and transfer to a marble surface or wide platter. 	2.	Mix the cooked rice with beaten eggs, grated cheese, grated nutmeg, salt, and pepper. Allow to cool. 	3.	In a skillet, sauté the minced onion and chopped celery in olive oil until they begin to color. Add ground veal or beef and cook until browned. 	4.	Stir in tomato extract (or tomato paste) and tomato sauce. Simmer for 20 to 30 minutes. Add sage leaf, grated cheese, and season with salt and pepper. 	5.	Add blanched peas to the meat sauce and simmer for an additional 5 minutes. Allow to cool. 	6.	Place flour, beaten eggs, and breadcrumbs in three separate plates. 	7.	Take a couple of tablespoons of rice mixture in your hand, make a hollow in the middle, fill with a teaspoon of meat sauce, and cover with more rice, shaping it into a ball. Ensure no filling is exposed. 	8.	Roll each arancina in flour, then beaten eggs, and finally breadcrumbs, ensuring it’s completely covered at each step. 	9.	Place the prepared arancine on a rack to dry while you shape the remaining ones. 	10.	Heat vegetable oil in a deep fryer to 375°F (190°C). Fry arancine a few at a time until golden brown. Ensure there’s enough oil to cover them completely. 	11.
