Cut the watermelon in half and scoop out the flesh, reserving the rind to use as a mold. 2. Prepare the lime Jell-O according to the package directions. Place a bowl slightly smaller than the watermelon rind inside the shell, then pour the lime Jell-O around it to form the "rind" layer. Fill the bowl with water to weigh it down, then refrigerate until set. 3. Prepare the cherry Jell-O according to the package directions.
