30 DAYS OF HEALTHY 20 MINUTE RECIPES Day 17| Peri chicken cheesy mash bowls, 459 calories & 43g protein! 🔥 Shopping list 🛒 - 250g chicken breast, cut into tenders - 2 tsp peri seasoning - 2 tbsp Peri marinade, I use medium heat - 8 stalks Tenderstem broccoli - 30g light cheddar, grated - 450g Maris Piper potatoes - 90ml Semi-skimmed milk - 1 tbsp Light butter, I use Clover light - Salt & pepper Method ✨ Season the chicken tenders with peri seasoning then spray a pan with oil. Fry the chicken on medium-high for 4 minutes before pouring the peri marinade over the chicken. ✨ Flip then fry for a further few mins until cooked through. Remove the chicken from the pan, leave any sauce leftover and pour in 1-2 tsp water then cook on high for 30 secs to make a sauce. ✨ Boil the diced potatoes in salted water for 15 mins or until fork tender. Mash along with the milk and butter then season with a good pinch of salt & pepper. ✨ Assemble the mash bowls, scatter over the cheese and microwave for 1 minute to melt.
