Blend the garlic, calamansi juice, and salt, then slowly stream in the oil until it turns thick, creamy, and emulsified. Set aside. - For the longganisa, start by removing the skin and adding it to a pan and let it cook down. Continue frying until the longganisa browns and releases its oils.  - Combine the tomatoes, onions, cilantro, lime, and salt to make a quick salsa.
