Honey Chipotle Chicken Pasta Bake  This was absolutely BANGIN 😍I love a good pasta bake for an easy dinner that also doubles up as a good meal prep that you can store in the fridge or freezer 👌🏼. Ingredients (serves 2): 200g chicken breast diced  2 tsp smoked paprika  1 tsp garlic granules  2 tsp italian herb seasoning
130g dry pasta (any short pasta works, I used fusilli)
1 small red onion diced  1 small red pepper diced 
1 tsp chopped garlic  1 chicken stock cube crumbled 15g honey  1 heaped tsp chipotle paste  200g passata  25g half fat cheddar grated
50g mozzarella grated  A few sprigs of fresh parsley chopped 💕Preheat the oven to 180 degrees celsius. 💕Season the chicken with 1 tsp smoked paprika, garlic granules, italian herb seasoning, along with a pinch of salt and pepper.  💕Add to a hot pan and cook for 7-8 minutes until almost cooked though.  💕Meanwhile, bring the pasta to boil in a large pan of salted water. Cook according to the packet instructions. Reserve 100ml pasta water once cooked, before draining and rinse in cold water. 

💕Once the chicken is almost cooked, add in the onion and pepper. Fry for a few minutes until soft. 💕Add the chopped garlic to the pan and stir for 1 minute.  💕Season with the 1 tsp smoked paprika and 1 tsp italian herb seasoning. Toss to combine before adding the stock cube, honey and chipotle paste. 💕Cook for a further minute, before pouring in the passata and pasta water.  💕Combine the cooked pasta, before transferring to an oven safe baking dish.  💕Top with the cheese before placing in the oven. Bake for 15-20 minutes until golden and bubbling.  💕Remove and garnish with the fresh parsley before serving.
