Keto Blueberry Pie

CRUST
• 2 cups almond flour
• 1/4 cup powdered monk fruit sweetener
• 1 tsp xanthan gum
• 1/2 tsp salt
• 8 tbsp cold butter, cubed
• 1 egg

BLUEBERRY FILLING
• 2 pints fresh blueberries (about 20–24 oz)
• 1/3 cup granulated monk fruit sweetener (adjust to taste)
• 1 tbsp lemon juice
• 1 tsp lemon zest
• 1/4 tsp xanthan gum

TOPPING
• 1 egg (for egg wash)
• 1 tbsp melted butter
• Optional: sprinkle of brown monk fruit sweetener

DIRECTIONS
1. Combine almond flour, powdered monk fruit, xanthan gum, and salt.
2. Cut in cold butter until crumbly.
3. Add egg and mix until a dough forms.
4. Divide dough into two equal portions. Flatten into discs and refrigerate 30 minutes.
5. Combine blueberries, sweetener, lemon juice, and lemon zest in a saucepan.
6. Simmer until berries begin bursting and releasing juice.
7. Stir in 1/4 tsp xanthan gum and cook 1–2 minutes longer until thickened.
8. Remove from heat and allow filling to cool.
9. Roll one dough disc between parchment paper until thin. Place into a 9-inch pie plate.
10. Pre-bake crust at 350°F for 8–10 minutes.
11. Add cooled blueberry filling.
12. Roll remaining dough thin and place over the top. Cut vents in the center.
13. Brush with egg wash and melted butter. Sprinkle lightly with brown monk fruit if desired.
14. Bake at 350°F for 30–35 minutes or until golden brown.
15. Cool at least 2 hours before slicing. Enjoyyyy!
