French Onion Pork Chops -4 boneless pork chops -1/2 cups flour for dredging + 1 tbsp for sauce mixture -salt, pepper, onion powder, garlic powder, smoked paprika, thyme -4 tbsp butter divided -avocado oil -1 onion thinly sliced -3-50 garlic cloves minced -1 cup broth -few shakes Worcestershire -1 cup grated Gruyère cheese (or Gouda) -chives to garnish 1.) mix 1/2 cup flour, thyme, onion powder, garlic powder, smoked paprika in a shallow dish 2.) between two parchment papers, add your pork chops and beat lightly with a mallet until about 1/2” thick. Season both sides with salt and pepper and then dredge in flour mixture. 3.) in a large oven safe skillet, heat 2 tbsp butter and 2 tbsp avocado oil over medium heat. Cook two pork chops at a time, 3-4 minutes per side. Remove and set on a proper towel lined plate while other two pork chops cook. 4.) in the same skillet, add 2 tbsp butter 2 tbsp avocado oil over medium heat. Add sliced onions and cook to your preference! If you want them caramelized it will take about 20-30 minutes. I usually will just soften and slightly brown them, 10 minutes max. Add chopped garlic and stir for 1 minute. 5.) pour 1/2 cup broth into pan to deglaze. In a bowl, whisk the other 1/2 cup broth with Worcestershire and 1 tbsp flour. Slowly stir into skillet. Taste and add salt/pepper if needed. 6.) add pork chops back to skillet and spoon the onion sauce mixture over top. Top with cheese and put under the broiler-watch it close! Should only take a couple minutes to melt the cheese. Enjoy!
