It never made sense to me. Why were people line up for chicken ove rice? Then I made it at home... & now I get it. Juicy chicken, fragrant rice, fresh vegetables, that famous white sauce, and a little heat on top. Simple ingredients, but somehow everything works together perfectly. Steps: Marinate the chicken: Mix chicken thighs with salt, pepper, turmeric, cumin, coriander, smoked paprika, oregano, garlic powder, chili powder, lemon juice, harissa paste, & yogurt. Mix well and marinate for at least 2 hours (overnight is even better). White sauce: Mix mayonnaise, yogurt, salt, pepper, sugar, dried mint, garlic, & lemon juice. Mix well & refrigerate until needed. Rice: Wash the rice well. Melt butter in a pot and add turmeric, cumin, onion powder, salt, & pepper. Add the rice & stir for a minute. Pour in chicken stock, bring to a boil, then lower the heat, cover, and cook until done. Vegetables: Dice the tomatoes and remove the watery seeds. Season with a little salt and olive oil. Thinly shred lettuce. Cook the chicken: Heat a little oil in a pan over medium-high heat. Cook the chicken until nicely charred and fully cooked through. Chicken thighs usually take a little longer than breasts. Let rest for a few minutes, then chop into bite-sized pieces. Build: Rice first. Chicken. Lettuce and tomatoes. A generous amount of white sauce. Finish with hot sauce if you like. One of the most refreshing full meals you can make. Light enough for hot weather, filling enough to be a complete meal, and packed with flavor.
