SARAPATEL Ingredientes: • 2 kg de miúdos suínos • 3 colheres (sopa) de vinagre • 1 fio de azeite • 2 cebola média picada • 6 dentes de alho picados • 1 colher (sopa) de colorau • 1/2 colher (sopa) de cominho • Pimenta-do-reino a gosto • Sal a gosto • Coentro a gosto • Água para cozinhar Modo de Preparo: 1️⃣ Lave bem os miúdos com água e vinagre. Coloque na panela, cubra com água e leve para escaldar. Escorra e reserve. 2️⃣ Corte todos os miúdos escaldados em pedaços bem picadinhos. 3️⃣ Em outra panela, aqueça o azeite e refogue a cebola e o alho até dourarem levemente. 4️⃣ Acrescente os miúdos picados e refogue bem para absorver o sabor. 5️⃣ Tempere com colorau, cominho, pimenta-do-reino, sal e coentro. Mexa bem. 6️⃣ Cubra com água e cozinhe por aproximadamente 40 minutos, até os miúdos ficarem macios e suculentos. 7️⃣ Finalize com mais coentro.
