INGREDIENTS:  - 1 pound of ground beef  - 2 large sweet potatoes (peeled & diced)  - 1 green bell pepper  - 1 yellow onion  - 5-6 cloves garlic (minced)  - garlic powder ~1/4 tsp - Salt + pepper  - Olive oil  FOR THE SAUCE:  - 1 tsp yellow mustard  - 1 tsp Dijon mustard  - 3 tbsps ketchup  - 2 tbsps coconut aminos (or tamari)  - 2 tbsps tomato paste  - 1 tsp apple cider vinegar  - Sprinkle of sea salt  - 1/4 tsp black pepper  - 1 tbsp chili powder  FOR TOPPING:  - Jalepeno (thinly sliced)  - pickled red onions  - Pickles  - Whatever your heart desires 🫶🏼 INSTRUCTIONS:  - Preheat your oven to 400 degrees - Peel and dice your sweet potato into cubes.  - dice your green bell pepper and yellow onion.  - Line your baking sheet with parchment paper, add your steamed sweet potato. Drizzle with olive oil and season with salt, pepper and garlic powder.  - Pop in the oven for 25-30 minutes or until they reach a crispiness of your liking.  - Mince 5-6 cloves of garlic then heat up your skillet over medium heat, add a splash of olive oil. Add your minced garlic, diced pepper and diced onion. Stir until just softened ~1-2 minutes.  - Then add in your ground beef. Break it up til it’s brown you know the drill. Once it’s mostly browned, add in your condiments for the sauce (listed above). Mix until fully combined and sauce is thickened. Remove from heat and it’s time to plate!  - I serve over my roasted sweet potato, top with pickled red onions, jalepeno and regular pickles! 1000/10 every single time.
