VEGAN LAHMACUN 🇹🇷👨🏼🍳 absolutely delicious Turkish “pizza“ ⠀ A thin and crispy dough, topped with the most delicious & hearty „meat“, all balanced out with a refreshing & juicy salad. 🤤 This is one of my top top favorite recipes and I highly recommend you give it a try: ⠀ RECIPE (6 portions) For the dough: - 500 g all-purpose flour (or bread flour) - 300 g water - 7 g dry yeast - 10 g salt - 2 tbsp olive oil ⠀ For the „meat“ filling: - 1-2 onions - 1-2 sweet red peppers - 3 garlic cloves - small bunch parsley - 400 g firm tofu, crumbled - 3 tbsp tomato paste - 2 tbsp Turkish pepper paste - 1 tsp smoked paprika (or 1 tbsp chipotle in adobo sauce) - 1/2 tsp cumin - 1/2 tsp allspice - 1/2 tsp cinnamon - 3 tbsp dried mushroom powder (optional) - 4 tbsp olive oil - salt to taste ⠀ For the salad: - red onion - tomatoes - parsley - sumac - salt - olive oil - lemon juice ⠀ ❶ In a bowl mix all ingredients for the dough. Let it rest for 15 minutes, then knead briefly and let it rise for about 1-2 hours. ❷ Roughly blend onion, pepper, garlic and parsley into a paste, then combine with crumbled tofu and the remaining ingredients for the filling. Cover and set aside. ❸ Divide the dough into 6 pieces, shape each piece into a tight ball, then cover with oil and proof for 1 hour or up to 2 days in the fridge. ❹ Preheat the oven to 250°C. ❺ Thinly stretch or roll out the dough.
